Chicken Galore (2 Chicken Recipes) (3/31/2006)

Company Chicken and Rice (submitted by Irene Lary-Tim's Mom)

3-4 lbs. Chicken pieces (remove skin if desired)
1 cup uncooked long grain white rice
1 tsp. salt
1/2 tsp. pepper
1/2 Cup Orange juice
2 Cups boiling water
1 Can Cream of Chicken soup

Preheat oven to 375-degrees.
Place in a 9 x 13 (or larger) glass baking dish:

Rice, salt, pepper, orange juice and boiling water. Add chicken pieces. Spoon soup over chicken.

Cover and bake for 45-minutes. Remove cover and return to the oven for 30-minutes. Serve.

Zesty Italian Chicken

3-4 bone-in chicken breasts (remove skin if desired)
8-10 red potatoes (rinsed and quartered)
1 bottle Zesty Italian salad dressing
Italian seasoning
Grated Parmesan cheese
salt &

In 9 x 13 baking dish, place chicken. Add potatoes. Pour Italian dressing over chicken and potatoes. Sprinkle chicken with Italian seasoning til covered. Sprinkle grated parmesan cheese to cover all.

Bake at 375-degrees for 1 hour.
