Open Face Tasty Tuna Melt Sandwiches (3/21/2008)

Open Face Tasty Tuna Melt Sandwich

2 6 oz. Cans chunk light tuna (albacore is fine)
2 tablespoons minced green onions
2 tablespoons reduced-fat mayonnaise
2 tablespoons sweet pickle relish
¼ cup minced celery
1 tablespoon fresh lemon juice
1 tablspoon minced flat-leaf parsley
pinch of salt
fresh ground pepper to taste
dash of hot sauce, like Tabasco
2 tomatoes, sliced
8 Slices Cheddar Cheese
Sour Dough Bread, Texas Toast, English Muffins or Rye Bread or your choice

Combine tuna, green onions, mayonnaise, relish, celery, lemon juice, parsley, salt, pepper and hot sauce in a medium bowl. Blend well and set in refrigerator for a couple of hours. Stir well before using.

Heat broiler in oven. Toast 4 slices of your choice of bread. Spread ¼ cup of the tuna mixture on each slice of toasted bread. Top with a slice of cheese, then a slice of tomato and then another slice of cheese.

Place sandwiches on a baking sheet and broil until the cheese is melted and golden brown, 3-5 minutes. Serve with salad and soup.
