Whitefish with fresh herbs and lime (2/22/2008)

White fish with fresh herbs and lime

4 5 or 6 oz. Firm white fish fillets (cod, sole, talapia, etc.)
¼ cup fresh lime juice
4 garlic cloves, pressed or minced
½ cup chopped fresh parsley
½ cup chopped scallions
1 tsp. Chopped fresh rosemary or ½ tsp. Dried, crushed
1 tsp. Fresh thyme leaves or ½ tsp. Dried
1 tsp. Sweet paprika
1 cup diced fresh tomatoes

Preheat oven to 375 degrees F. Rinse fish fillets, pat dry and set aside. In a medium bowl, mix together the lime juice, garlic, parsley, scallions, rosemary, thyme, paprika, and tomatoes. Place the fillets in an unoiled baking dish and spread the topping evenly over the top. Cover tightly with foil and bake for about 25 minutes, until the fish flakes easily with a fork.

Serve with side salad and baked or mashed potatoes and vegetable.
