Pizza Soup (12/28/2007)

Pizza Soup

1 ½ pounds ground beef
1 pkg. Sliced pepperoni (separated)
1 (8 oz.) pkg. Sliced mushrooms
1 medium red onion, finely chopped
2 cans (26 oz. Each) condensed tomato soup, undiluted
1 (10 ½ oz.) can condensed tomato soup, undiluted
1 (14 oz.) can beef broth
4-5 cups water
1 (26 oz.) jar spaghetti sauce
1 ½ tablespoon Italian seasoning
2 cups shredded cheddar cheese
Shredded mozzarella cheese for garnish, optional

In a large soup pot, cook ground beef until no longer pink and then drain. Add mushrooms and onions and sauté 5-10 minutes. Add pepperoni's. Add the soup, broth, water, spaghetti sauce and Italian seasoning; bring to a boil. Reduce heat; simmer, uncovered for 15 minutes.

Add cheese; cook and stir until melted. Garnish with mozzarella cheese if desired. Yield: 18-20 servings
