Bacon Avocado Ranch Chicken Sandwich
2 Avocado’s, peeled and roughly mashed
1 cup creamy Ranch dressing
2 green onions, sliced
½ cup crisp cooked bacon, crumbled
1 lb. shredded chicken
1 ½ cups shredded cheese (Colby jack)
1 French bread loaf
Preheat oven to 375-degrees F.
In a large bowl, roughly mash avocados. Add ranch dressing, green onions, crumbled bacon, chicken and shredded cheese. Mix well. Cut French bread lengthwise in half. Add chicken mixture to bread. Place top on bread and put loaf on a baking pan and bake for 10-15 minutes. Remove from oven, slice and serve.
